Guacamole

Date: May 5th, 2025

Reason for Cooking: I wanted a healthy snack and had ripe avocados on hand.

What I Learned:

Texture matters. Over-mashing made it too smooth, and I learned that guac tastes best with some chunkiness. Also, lime juice isn't just for flavor as it helps prevent browning.

What Worked Well:

Mashing with a fork gave good control. Using red onion instead of white gave it a better bite. Adding the lime juice right after mashing helped keep it green longer.

What Didn't Work:

I added too much salt at first and had to balance it out with an extra avocado.

Adjustments Made:

Used chili flakes instead of jalapeños for heat.

What I'd Do Differently:

Add jalapeños for real spice and maybe include diced tomato for a salsa-style texture.

Recipe:

Ingredients:

  • 2 ripe avocados

  • 1 small red onion, finely chopped

  • Juice of 1 lime

  • 1 tbsp chopped cilantro

  • Salt and pepper to taste

  • Pinch of chili flakes (or ½ chopped jalapeño)

  • 1 tsp olive oil (optional)

Steps:

  1. Cut avocados, remove pits, and scoop into bowl.

  2. Mash with a fork until mostly smooth, with some chunks.

  3. Stir in onion, lime juice, cilantro, chili flakes, olive oil.

  4. Add salt and pepper to taste.
